CEYLON
Ceylon, an island state in the Indian Ocean, is the largest black
tea exporter in the world. The best quality, fruity, and mildly metallic
tasting teas grow in the highlands. Ceylon specializes in broken teas
which means that exquisite leaf teas such as our Nuwara Eliya are
rare. The best quality harvest is plucked in the east, in the Uva
district, between June and September when it rains in the west of
the island. The best tea is plucked in Dimbula between December and
March when the monsoon brings rain to the east. |

CHINA &
FORMOSA
In China most people drink green tea, although some black tea is also
produced. Keemun is the best known variety. Pu-Erh tea has now also
made Yunnan well-known. Formosa's specialities are Oolongs which the
Chinese brought with them from Fujian Province. The fermentation of
these teas is interrupted when the edge of the leaf has oxidized,
although the centre of the leaf is still green. These teas contain
little caffeine and their flavour is sweet with a mild nuance of dough
or nuts. Oolongs can be left to steep longer since they retain their
mildness. |

Specialties
There are as many different tea customs as there are varieties of
tea. These customs result from the history and culture of each country.
For example, the English add plenty of milk to their tea and therefore
their tea needs to be more full-bodied. The East Frisians also like
their tea strong and that is why these Assam blends often contain
a Ceylon or Java tea. In Russia, tea is savoured from a samovar
